Mate Type #1: Refined Mate

Matured (or traditional) mate is the mate that is used by almost all South American brands for its intense flavor.

Curing involves storing yerba mate leaves for 3 to 24 months under certain humidity and temperature conditions to intensify their flavor.

Matured mate has a yellowish color and a rather strong flavor. It is recommended for those accustomed to the taste of mate as well as for those who like bitter drinks.

Mate Type #2: Green Mate

Unlike traditional mate, green mate is a mate that has not been refined.

This means that it is ready to eat within days of being harvested.

It differs from classic mate by a milder taste, less abrupt than refined mate.

In our experience in France, this is the most popular type of mate. It appeals to both those who are new to the drink and those who have been drinking mate for a long time, thanks to its balanced taste: intense, but not very bitter .

Roasted mate , or brown mate, is mate that has undergone an additional operation: roasting. This step, mainly used for coffee or cocoa, consists of intensely heating the leaves for a short period.

Roasting caramelizes the sugars naturally contained in the mate leaves, giving it a caramelized and slightly toasted taste.
