Few people know it, but there are several types of mate: the "classic mate" and the green mate.

The former is the one found everywhere and consumed in Argentina, Uruguay, and Paraguay.

While the latter has a milder taste and is more popular in Europe and the United States.

And because choosing the right type of mate is crucial to enjoy this drink, we explain here how to choose the one that suits you best.

The main difference between green mate and traditional mate: aging


Aging is a step that involves storing mate leaves under certain conditions for several months to mature the mate. A bit like wine.

The purpose is to concentrate and intensify its aromas.

It can be aged for up to 24 months, but the vast majority of aged mates undergo aging of 6 to 12 months.

Green mate: no aging

Widely spread in Argentina, Uruguay, and Paraguay, it is a mate that is almost always aged between 6 and 12 months.

This aging step gives it a very strong taste and a yellowish hue.

It is ready to be marketed just a few days after being harvested.

Green mate is also the most popular form of mate in the United States and Europe for its taste, which is very different from traditional mate, being milder.

Traditional mate and green mate: A difference in bitterness

Traditional mate has a very pronounced bitter taste that almost always surprises the palate of non-habitual drinkers.

On the contrary, green mate has a much milder taste, halfway between coffee and green tea.

We can undoubtedly affirm two things regarding these two types of mate:

  1. Traditional mate is and will obviously remain the favorite mate of Argentinians, Uruguayans, and Paraguayans. Its taste is very strong, but they are used to it. It’s their mate and they love it.
  2. In France, few people are used to drinking traditional mate, and its taste is a bit "violent" for the uninitiated. So, for all those who have never drunk mate or who have only recently started, green mate is THE type of mate to go for.

We hold these claims from experience: before offering green mate, we only sold traditional mate, and the feedback indicating that the taste was too strong was very numerous.

That’s why we went in search of a much milder mate, which we use in our range of mate.

Some examples of traditional mate brands

Almost all mate brands on the market (especially the most common ones) offer traditional mate. The yerba mate from these brands is aged or processed through an industrial method simulating aging.

Amanda produces its mate in the Misiones region. It is one of the oldest brands of Argentina.

Canarias mate is a Uruguayan mate brand. It is even the most popular in Uruguay.

On the other hand, Canarias mate is not produced in Uruguay, but in Brazil.

The Pajarito mate brand is the most well-known from Paraguay. It is renowned for its very strong taste.

The Pajarito company is a large enterprise, with a daily production of 20 tons of mate.
